- 0,6 kg Couscous
- 1,5 kg Oatmeal
- 1,2 kg Chunky salsa medium strength
- 3,0 kg water
- 2,1 kg Dry Simsubas
- 120 gram Salt
- 360 grams Taco seasoning mix
- 1,8 kg Yellow onion chopped or diced
- 530 grams Rapeseed oil
Instructions
Mixing:
- Mixing can be done in a Varimixer/Björn, in a cooking pot or by hand. When mixing in a cooking pot, do not forget to remove the side wing. We recommend a maximum of 20 kg of dry Simsubas per batch when mixing in a cooking pot. NOTE! When mixing with inferior stirring (saucepan or pre-mixing) make sure that the water, oil and all "wet ingredients" are mixed together a little before starting the stirring for best results.
Instruction
- Soak the couscous and oatmeal in the water and chunky salsa for 30 minutes
- Then mix all the ingredients together into a smooth dough.
- Form small patties in a meat grinder or by hand.
- Bake in the oven at 160 degrees with the door closed to 92 degrees internal temperature, about 20 minutes.
- Fry or grill and brush with a little oil or a good glaze.
Tips:
- To keep the cost down, feel free to make your own Taco seasoning mix and Chunky salsa
- Taco seasoning mix: Spice with cumin, paprika powder, onion powder, garlic powder, chili etc. Remember to increase the amount of salt slightly as ready-made taco seasoning contains salt.
- Chunky salsa: For each kg of chunky salsa, substitute 750 grams of crushed tomato, 50 grams of tomato paste, 100 grams of yellow onion. Add the lime juice and balance to the right acidity and then season to taste with e.g. paprika, chili pepper, garlic, cumin, cayenne pepper, coriander, oregano etc and add the desired amount of salt.
