But wait a minute, bread is primarily a source of carbohydrates and here we are talking about a bread that has as much protein as a steak? Well, this certainly turns things upside down. However, we can promise that this will be a really good bread and if served with a good soup, it will increase the protein intake of the meal considerably!

  • 2,4 kg Bread

  • 760 grams Wheat flour
  • 550 gram Dry Simsubas
  • 1230 grams Water
  • 30 grams Dry yeast
  • 120 grams Olive oil
  • 15 gram Salt

  • Pour the yeast into a bowl. Pour in some finger-warm water (about 37 degrees) and stir until the yeast dissolves.
  • Add the rest of the water, olive oil, salt and flour, a little at a time.
  • Work together into a fairly loose dough. Bake in the oven for 40 minutes, or 60 minutes at room temperature.
  • Preheat the oven to 200 degrees. Drizzle 1.0 dl of olive oil into high-sided baking trays and add about 2.5 kg of dough to each tray. Drizzle more olive oil on the dough and press the dough into the edges.
  • Make small pits with your fingers and sprinkle with flaky salt, rosemary and press down the olives.
  • Bake for about 25 minutes to an internal temperature of 98 degrees.

Tips:

  • The recipe can of course be adapted to your own preferences regarding flavors, garnish, etc.
  • Try enriching your own favorite recipe with Dry Simsubas by replacing parts of the flour. Remember to increase the amount of liquid slightly as Dry Simsubas binds more liquid than wheat flour.
