Meatloaf is a common favorite of many. Easy to make and incredibly tasty! This recipe is no exception and here we have also added soaked green lentils for an even better health profile in this keyhole-labeled recipe.

  • 50 grams Garlic powder
  • 20 grams Smoked paprika powder
  • 10 grams Black pepper
  • 20 grams Ginger
  • 10 grams Allspice
  • 77 gram Salt
  • 2,4 kg water
  • 0,6 kg Oat cream
  • 100 grams Chinese dark soy
  • 0,8 kg Rapeseed oil
  • 1,0 kg Yellow onion chopped or diced
  • 80 gram Tomato paste
  • 1,8 kg Soaked green lentils (optional)
  • 1,5 kg Potatoes boiled and grated

Instructions

Mixing

  • Mixing can be done in a Varimixer/Björn, in a cooking pot or by hand. When mixing in a cooking pot, do not forget to remove the side wing. We recommend a maximum of 20 kg of dry Simsubas per batch when mixing in a cooking pot.
  • NOTE! When mixing with inferior stirring (cooking pot or by hand) make sure that water, oil and all "wet ingredients" are mixed together a little before starting the stirring for best results.

Instruction

  • Rinse and soak green lentils in plenty of water for at least 3 hours. Lentils can also be excluded
  • Mix the dry ingredients
  • Then mix in all the other ingredients
  • Start mixing at low speed and when all the liquid has entered the powder, increase the speed.
  • Ready after about 20 seconds in the Varimixer/Björn (when the dough has come together into a homogeneous mass) and about 1 minute in the cooking pot. Do not cook for too long as the texture may become too tough.
  • Place in trays, approx. 5 kg per tray, or form into loaves and cook in the oven at 120 degrees, 20% moisture to 88 degrees internal temperature. When ready, brush on a mixture of vegetable broth and dark soy. Gratinate a few more minutes to get a nice surface.
  • Allow to rest for at least 10 minutes before slicing. If you have made a loaf, it may be advisable to chill for longer to cut fine slices.

Tips:

  • Reduce waste: A mince pie can be used to mix in a lot of leftovers, from mashed potatoes to bread and leftovers from the salad table.
  • More umami flavor: Sauté the onion in the rapeseed oil, adding the tomato paste at the last minute.
