If you ask children what their favorite soup is, it is not uncommon for Cowboy Soup to be high on the wish list. If you want a little more flavor, you can advantageously mix with some other flavored Simsu strips as well, such as our good smokie strips .
The below portion size and amount of protein is for mince strips.

  • 10 grams Black pepper
  • 20 gram Salt
  • 2,3 kg water
  • 0,5 kg Rapeseed oil
  • 125 grams Chinese dark soy

  • 5,0 kg Colour strips
  • 4,5 kg Red pepper diced
  • 2,0 kg Yellow onion coarsely chopped or diced
  • 150 grams Pressed garlic
  • 60 grams Paprika powder
  • 30 grams Dried oregano
  • 120 gram Salt
  • 20 grams Black pepper coarsely ground
  • 500 gram Tomato paste
  • 8,0 kg White beans in tomato sauce
  • 8,0 kg Potatoes boiled and diced
  • 6,0 kg Cooking cream
  • 2,0 kg Cooking wine white
  • 10,0 kg water
  • 220 grams Vegetable broth

Instructions

Mixing:

  • Mixing can be done in a Varimixer/Björn, in a cooking pot or by hand. When mixing in a cooking pot, do not forget to remove the side wing. We recommend a maximum of 20 kg of dry Simsubas per batch when mixing in a cooking pot.
    NOTE! When mixing with inferior stirring (saucepan or pre-mixing) make sure that the water, oil and all "wet ingredients" are mixed together a little before starting the stirring for best results.

Instruction, minced meat strips

  • Mix the dry spices and dry simsuba base.
  • Then mix in all the other ingredients
  • Start mixing at low speed and when all the liquid has entered the powder increase the speed.
  • Ready after about 20 seconds in the Varmixer/Björn (when the dough has come together into a homogeneous mass) and about 2 minutes in the cooking pot.
  • Cover with ink about 5 kg per sheet and temper to 86 degrees at 120 degrees, 20% moisture in the Combi oven.
  • Leave to cool overnight
  • Grate with a 10 mm coarse sieve (coarsely grated carrots) in a shredder or grind in a meat grinder to a mince.

Instruction, cowboy soup

  • Briefly roast or toast minced meat strips in the oven or on a griddle to add a little more texture to the casserole and make it hold up better when kept warm.
  • Sauté the peppers and onion in the oil in a pan.
  • Reduce the heat and squeeze in the garlic and season with tomato paste, paprika, oregano, salt and pepper.
  • Stir in potatoes, white beans, cream and stock
  • Bring to the boil and simmer for 10 minutes
  • Add the grated Simsun to the pot and bring to the boil, season with salt and pepper.
  • Serve with bread and a little sour cream or creme fraiche.

Tips

  • Some people find that corn also fits very well in the soup
