- 2,0 kg Water for the first mixture
- 4 gram Collorite
- 28 gram Salt

- 4,0 kg Simsufärs
- 1,3 kg Green pepper diced
- 2,0 kg Red pepper diced
- 1,1 kg Yellow onion shredded
- 110 grams Garlic finely chopped
- 175 gram Tomato paste
- 1,1 kg Kidney beans
- 1,3 kg Large white beans
- 1,3 kg White beans in tomato sauce
- 2,1 kg Crushed tomatoes
- 11 grams Smoked paprika powder
- 30 gram Chipotle paste medium strength
- 4 gram Ancho chili powder
- 18 grams cumin
- 55 gram Salt
- 100 grams Vegetable broth
- 6,5 kg water
Instructions

- Mix together Dry Simsubas, water, salt and collorite.
- Allow to rest for about 5 minutes for the texture to settle.
- Add additional water for simmering and bring to a boil without stirring or with very gentle stirring. Simmer for about 15 minutes. Add more water if necessary. This can also be done on a frying pan with extra water in the bottom of the pan.

- Quickly fry the onions and peppers in a pan to give them some colour.
- Add the garlic and tomato paste, sauté for a few more minutes.
- Add spices and stir
- Add the beans, crushed tomatoes, water, vegetable stock and Simsu peas. Simmer for 15-20 minutes
Tips
- For an even richer chili, replace some of the water with red cooking wine.
