  • 2,1 kg Dry Simsubas
  • 4,0 kg Water for the first mixture
  • 8 gram Collorite
  • 56 gram Salt
  • 2,0 kg water to simmer in

Finished quantity of bolognese

  • 30,4 kg Bolognese

  • 8,0 kg Simsufärs
  • 2,5 kg Yellow onion chopped or diced
  • 125 grams Garlic pressed
  • 750 gram Tomato paste
  • 10,0 kg Crushed tomatoes
  • 150 grams Vegetable broth
  • 25 gram Basil dried
  • 25 gram Oregano dried
  • 25 grams Black pepper
  • 100 gram Salt
  • 50 gram Bay leaf
  • 500 grams Japanese soya
  • 6,3 kg water
  • 5,0 kg Oat cream

Instruction for mixing

  • Mixing is preferably done in a cooking pot.
  • Mix Dry Simsubas, first water, salt and Collorit.
  • Start the stirrer and mix until homogeneous. Then turn off and let the mince rest for about 5 minutes for the texture to stabilize and become a mince-like mass.

  • Cooking in the oven is done to allow the texture to set.
  • Add 4 liters of stuffing per tray and add another 1.3 liters of water for simmering and distribute on the tray.
  • Cook in the oven on the steam program to 85 degrees internal temp, about 40 minutes.
  • Remove from the oven and beat the mixture slightly with a balloon whisk before it cools. The result should be a grainy mixture.

Tips:

  • Also try making color strips from a block instead for even better texture.

  • Fry the onion and garlic for a few minutes
  • Add the tomato paste and sauté for another minute.
  • Add the other ingredients and simmer for about 20 minutes.
