Ingredients, Simsufärs

  • 1,5 kg Dry Simsubas
  • 2,9 kg Water for the first mixture
  • 6 gram Collorite
  • 40 gram Salt
  • 1,4 kg water to simmer in

Ingredients, meat sauce

  • 8,0 kg Crushed tomatoes
  • 3,0 kg water
  • 700 gram Tomato paste
  • 40 grams Onion powder
  • 40 grams Garlic powder
  • 300 grams Japanese soya
  • 30 gram Oregano
  • 10 grams Black pepper
  • 100 gram Salt
  • 160 gram Sugar
  • 5,0 kg Minced meat or other minced meat
  • 1,0 kg Cooking cream

Instructions

Instruction, mixing:

  • Mixing is preferably done in a cooking pot.
  • Mix Dry Simsubas, first water to the mixture, salt and collorite.
  • Start the stirrer and mix until homogeneous. Then turn off and let the mince rest for about 5 minutes for the texture to stabilize and become a mince-like mass.

Instructions, Simsufärs - Cooking in the oven (recommended)

  • Cooking in the oven is done to allow the texture to set.
  • Add 4 liters of stuffing per tray and add another 1.3 liters of water for simmering and distribute on the tray.
  • Cook in the oven on the steam program to 85 degrees internal temperature, about 40 minutes.
  • Remove from the oven and beat the mixture slightly with a balloon whisk before it cools. The result should be a grainy mixture.

  • The next step is to gently simmer the mince to set the texture. Add water for simmering
  • Bring to the boil on the lowest setting so as not to break the texture and simmer for about 10 minutes. The result should be a grainy mixture.

Instruction, bolognese

  • Add the Simsu peas, crushed tomatoes, water and all the spices. Bring to the boil while stirring
  • Add the minced meat. Bring to the boil while stirring and simmer for at least 10 minutes.

Tips:

  • For even more umami, it is of course better to build up the stew with a really good "bottom", for example by frying onions and letting the tomato puree fry a little at the end. You can also use some broth (meat, mushroom or other) to further boost the umami. If you want even more flavor, try adding some cream as well.
