Use of Simsu Oat Base

When using Simsu Oat Base for cooking, it is important that:

- The product is dissolved in cold water with vigorous stirring to prevent the formation of lumps
- Heating is done with stirring, especially when going above 55 degrees
- Do not heat too quickly when the product passes 55 degrees but allow the product to be at least 3 minutes at a temperature of 60 - 70 degrees to give the finished product the right consistency
- Heat the product above 75 degrees to give the product its closed consistency, taste and shelf life
- Finished products can be made in a simmer or other methods with manual or automatic stirring and heating.

Cream contains a high percentage of saturated fat which gives a creamy feel and rich flavor. For all uses of Simsu oat base, it can of course be used in combination with cream if desired. Usually a small amount of cream is enough to get enough richness and creaminess.

Recipe - Instead of cooking cream

1. Add the cold water and oat base to the stimmer or other mixing vessel.
2. Stir on high speed for about 1 minute
3. Slowly heat up to 60-65 degrees with medium stirring, about 10 minutes is the right heating rate to reach 60 degrees. Reduce the heating speed at the end so as not to go too high.
4. Keep the temperature at 60-65 degrees for at least 3 minutes and then add rapeseed oil with high stirring
5. Then heat to about 80 degrees with medium stirring to pasteurize and give longer shelf life to the finished product
6. Let cool and then ready to use. Lasts at least 7 days in the refrigerator if handled properly. When stored in the fridge, the finished product may layer so stir or shake thoroughly before use.

Base for sauces and gratins

1. Add all the liquid in the form of cold water that is for your recipe. The amount of cream in the recipe should thus be replaced with cold water in this step
2. For every 1 kg of cooking cream to be replaced in the recipe add 80 g of oat base and stir on high speed for about 1 minute. If you are replacing whipping cream in the recipe, use double the amount of oat base and canola oil
3. Slowly heat up to 60-65 degrees with medium stirring, about 10 minutes is the right heating speed to reach 60 degrees. Reduce the heating speed at the end so as not to go too high.
4. Keep the temperature at 60-65 degrees for at least 3 minutes and then add 150 g of rapeseed oil while stirring vigorously
5. Then add the other ingredients to the sauce
6. Then heat to over 75 degrees with medium stirring to get the right consistency
7. Adjust the sauce if desired. Keep in mind that the oat base itself has a reddening function and the amount of reddening can be reduced compared to normal.

Recipe - Vegan cream sauce

Vegan cream sauce

1. add the cold water and oat base to the bowl or saucepan.
2. stir on high speed for about 1 min.
3. Heat slowly to 60-65 degrees with medium stirring, about 10 minutes is the right heating speed to reach 60 degrees. Reduce the heating speed at the end so as not to go too high.
4. Keep the temperature at 60-65 degrees for 5 minutes and add canola oil while stirring vigorously.
5. Then add the other ingredients and spices to the sauce.
6. Then heat to over 75 degrees with medium stirring to get the right consistency. Ready to serve!

If it is not necessary with a vegan cream sauce and you want a fuller flavor, you can add about 500 g of whipped cream as the saturated fat in the cream will facilitate and give an even fuller taste and creamier feeling.

Pasta gratin on Simsu oat base

This recipe is with chicken but can also be made vegetarian by substituting for example Tofu, large white beans or other suitable alternative.
A Mediterranean alternative with sun-dried tomatoes and feta cheese will also be really good.

1. Heat the chicken fillet in the oven to the right internal temperature
2. Add cold water and oat base in a colander or other mixing vessel
3. Stir at high speed for about 1 minute
4. Heat slowly to 60-65 degrees with medium stirring, about 10 minutes is the right heating speed to reach 60 degrees. Reduce the heating speed at the end so as not to go too high.
5. Keep the temperature at 60-65 degrees for at least 3 minutes and then add the rapeseed oil while stirring vigorously
6. Then add the chili sauce, all the spices and salt
7. Then heat up to over 75 degrees with medium stirring to get the right consistency
8. Pour the pasta into a tray and sprinkle with the shredded chicken fillet and corn
9. Pour over the sauce so that it is evenly distributed in the tray
10. Sprinkle some grated cheese
11. Cook in the Combi oven, 180 degrees about 35 minutes.
